Chocolate Guinness Brownies

These have a chocolate richness that is frankly unstoppable

By Kimberlie Robert

I guess I have a thing for boozy brownies. On an emotional level, there is something counter intuitive about mixing beer into brownie batter. On an intellectual level it makes perfect sense. Back when I wrote about the Chocolate Shortbread with Malted Milk Buttercream, I discussed the special relationship between malted milk and chocolate, and in the same way, the malty Guinness contributes a gorgeous velvetiness that is indescribable.
I promise these Guinness Brownies sparkle with roasted and smokey flavours, and have a chocolate richness that is frankly unstoppable. The flavor profile is only heightened by the alcohol, which cooks off BTW, and the texture is creamy, dense and fudge-y. As long as you don’t tell the kids about the beer, they will love these brownies too, and they’ll they’ll think you are some kind of magician in the kitchen.

The brown butter and red wine brownies were the best I’ve ever baked. Question is, will I be allowed to use the Guiness in this new recipe before it is consumed?
