Sweet Potato Panelettes
Panelettes…oh panelettes…the most charming Catalan cookie of the land.

The potato paste can be flavoured in all kinds of ways: with chocolate, coffee, chestnut, pine nut covering. The possibilities are endless, but with sweet potato, lemon and cardamon, they are a delightful surprise. The sweet potato lends its beautiful density, while the coconut determines the final chewy texture. The cardamon, when used judicially, deepens the sweetness and gives a spicy finish. Then there’s the lemon—the beautiful citrusy lemon. They are gluten free, no added fat (except from the almonds) and have such an unexpected appeal, you won’t be sorry for making them or eating them.
