These Lemon Marshmallow Easter Eggs were a great deal of fun to make — not hard at all — easy in fact. They’re decorative, playful and bring such joy to the kids I gave them to. This marshmallow recipe isn’t fragile, so they can be wrapped up in clever ways and given as gifts. The marshmallow is soft and airy while the coarse sugar is crunchy. Yes, they were sweet (as one would expect), but not overwhelmingly so. More importantly, they are super flavourful — lemony and acidic at the same time — a bit like lemon meringue pie. I was so pleased with how they turned out.
